This recipe is intentionally simple, making it easy to customize.
- For a deeper, richer flavor, quickly sear the beef in a hot skillet before adding it to the slow cooker. Deglaze the pan with ¼ cup dry red wine and a splash of the beef broth, then pour the flavorful liquid into the slow cooker.
- Add 1 to 2 cups of sliced mushrooms, onions, or carrots for extra vegetables.
- Substitute cream of celery or cream of onion soup for a slightly different flavor.
- Stir in 1 teaspoon dried thyme or Italian seasoning for an herby twist.
- For thicker gravy, whisk together 1 tablespoon cornstarch and 2 tablespoons cold water. Stir the slurry into the slow cooker about 20 minutes before serving, then cook on HIGH until the gravy thickens.
- To reduce sodium, use low-sodium beef broth and reduced-sodium condensed soup, and avoid adding extra salt until you’ve tasted the finished gravy.
Serve with mashed potatoes, egg noodles, rice, or creamy polenta for a hearty, comforting meal.
