4-Ingredient Slow Cooker Smothered Beef (Sirloin Tip Roast)

Smothered beef is one of those deeply comforting dishes found throughout American home cooking, especially in the Midwest and the South. At its heart, it’s simply well-seasoned beef cooked low and slow beneath a rich blanket of gravy until it becomes fall-apart tender.

This slow cooker version uses thick-cut sirloin tip roast, which holds its shape while becoming incredibly tender. With just four ingredients, it’s the perfect hands-off dinner for busy days. Simply set it in the slow cooker and let your kitchen fill with the comforting aroma of dinner cooking itself.

This smothered beef pairs perfectly with something starchy to soak up the rich gravy. Mashed potatoes are the classic choice, but buttered egg noodles, steamed white rice, or creamy polenta are equally delicious.

  • 3 pounds sirloin tip roast, cut into 1- to 1½-inch-thick slices or large chunks
  • 1 (10.5-ounce) can condensed cream of mushroom soup
  • 1 (1-ounce) packet dry onion soup mix
  • 1 cup low-sodium beef broth

Directions

1. Prepare the Beef

Pat the beef dry with paper towels. If using a whole roast, cut it into 1- to 1½-inch slices or large chunks. This helps the sauce coat each piece evenly and promotes even cooking.

2. Layer in the Slow Cooker

Arrange the beef in an even layer in a 5- to 6-quart slow cooker. It’s fine if the pieces overlap slightly—they’ll shrink during cooking.

3. Make the Gravy

In a medium bowl, whisk together the cream of mushroom soup, onion soup mix, and beef broth until well combined. The mixture will be thick, but it will transform into a rich gravy as it cooks.

4. Coat the Beef

Pour the sauce evenly over the beef, making sure every piece is at least partially covered. Use a spoon or spatula to distribute the sauce between the pieces.

5. Cook

Cover and cook:

  • LOW: 7 to 8 hours
  • HIGH: 4 to 5 hours

The beef is done when it’s fork-tender and pulls apart easily. Avoid lifting the lid during cooking, as this releases heat and can extend the cooking time.

6. Finish and Serve

Taste the gravy and thin it with a little additional broth or water if it’s thicker than you prefer. Season with freshly ground black pepper if desired. Additional salt usually isn’t necessary since the soup mix is already well seasoned.

Serve hot, spooning plenty of gravy over each serving.
